Garlic Potato Salad

Another simple summer recipe.

Garlic Potato Salad

2 lb potatoes, boiled, diced
1 head garlic, roasted*
1/2 c mayonaise (more or less to taste)
4 boiled eggs, diced
Salt to taste
Lemon juice to taste

Mix all ingredients.

*to roast the garlic, cut the top off the head exposing the interior of all the cloves. Drizzle with olive oil, wrap in foil, bake at 400F until soft. Press browned garlic from the cloves.
