I had some sweet potatoes in the share a couple of weeks ago and they just don't keep as well as regular potatoes so I decided to think ahead a bit and make something for dinner on Monday when we're going over to Ben's parents. I had the oven on because today was a cooking cooking cooking day. I pumped out a loaf of cottage dill bread, some orange cream cheese brownies (why do I always mentioned baking first? Oh yeah, because I like it best), this Shepard's pie, some pork chops and barley (made just like the chicken & barley), and some maple parsnips. Oh, and I cooked up a pumpkin so it wouldn't get rotten although that is just pureed pumpkin now. It may be made into a pie soon. I tossed the sweet potatoes in the oven while I had all these other things going.
Mexican Shepard's Pie
Use your favorite ratio for the various ingredients. It's all good. These are listed top to bottom in the pie
Grated cheddar
Mashed sweet potatoes
salsa
corn
black beans
Taco meat
Taco meat
1 lb browned hamburger
1 diced onion
1 clove minced garlic
about 1 tsp cumin
about 2 T chili powder
water
Brown the burger, add the onion and garlic and cook until soft, add the spices and the water and cook for about 10 minutes.
Bake until hot at 350 - about 45 min to an hour
I've got it assembled and ready to heat up before we head out on Monday.
Rating: Excellent although it was a little spicy for Sam. Should probably use mild salsa for him.
