Everyday Peanut Butter Cookies

The peanut butter cookies of my youth; my Dad's favorite cookies.  I know shortening is supposed to be evil and all but really, the crisp is worth it!


Peanut Butter Cookies

10 minutes


1 c shortening
1 c sugar
1 c brown sugar
2 eggs
1/2 tsp salt
1 1/2 tsp baking soda
1 tsp vanilla
3 c flour
1 c peanut butter

Cream the shortening and sugars.  Add the rest.   Make into balls approximately 1" in diameter and press down with a fork.

Bake for 10 minutes on an ungreased cookie sheet.
