Cornmeal Blueberry Cobbler


Mix berries:

4 c fresh or thawed blueberries

1/3 c sugar

2 1/2 tablespoons corn starch

1 tablespoon lemon juice


Topping:

1 c fine polenta (or other cornmeal)

1 c flour

1/2 c sugar

2 tablespoons baking powder

1/4 teaspoon salt

6 tablespoons cold butter cut into small pieces

1/2 cup milk (I mixed heavy cream with a little milk because that's what I had)

1 egg.


Preheat the oven to 375.

Mix the dry ingredients.  Cut in the butter until it forms crumbs.  Mix the egg with the milk and stir into the dry ingredients. 

Butter a casserole dish at least 9" in diameter.   Dump in the blueberry mixture.  Drop the cornmeal mix over the berries.  

Bake 30-35 minutes until top is nicely browned.
